Leigh Ann usually has Sundays off (and so do I) and decided that free time on Sunday would be a good time to make and freeze some casseroles so we would have some easy dinners (and leftovers for lunches) for the following couple weeks.
She hit the internet and found frozen casserole recipes. Which I think is pretty funny (and ironic), since whenever I have cooked for Leigh Ann, she poked fun at me for using internet recipes. The first two recipes she picked were Wild Rice Turkey Bake and Ham-Stuffed Manicotti.
We went to Wal-Mart late one night and got the ingredients. When we got back, she probably spent two and half hours (maybe even longer) fixing four casseroles. That's a lot of work for something you're not going to eat right away. We did eat one the next night however ... and it was terrific. And it was terrific for the next couple days. Turns out you get a lot of servings out of a single casserole. That's just fine with me since it was really good.
I'm really looking forward to trying the Ham Manicotti tonight. I love that Leigh Ann is so smart and clever. We both felt like we've been eating out too much, but both of us have had less time recently to invest in cooking meals. She found a great way to prepare some meals when we did have time and eat them later when we don't have time. Just one more reason why I love her sooooooooo much.
